The Ultimate BIR Tikka Masala

This post will be short and sweet (and coconutty and delicious). I’ve been trying for 3 years to cook a curry at home which tastes like a British Indian takeaway tikka masala. I’ve tried countless recipes and have always ended up a little underwhelmed. “What is your secret!” I ask each time we frequent one of our favourite curry houses.

Well, I’ve finally cracked it! The trick to making a British Indian curry (or BIR curry) is a homemade base curry sauce. In essence, you are making two recipes and combining them. While it does seem like a lot of work, once you have a batch of base curry you can freeze this in bags (I do mine in 300ml and 600ml portions) so that in future you can make curries much faster. You can also use this base curry sauce for nearly any curry (madras, vindaloo, korma, tikka, jalfrezi, ect) and for many other Indian side dishes such as saag chana.

So without further ado… my recipe for the ultimate BIR tikka masala!

*as I’m vegetarian I omit the chicken but of course this can be added, or you can use Quorn chicken but honestly I love this sauce so much I could drink it and prefer simply this delicious sauce over rice. If you want it to be as red in colour as in Indian restaurants you can add red food colouring powder which is what they use to get the bright red colouration.

ULTIMATE BIR TIKKA MASALA SAUCE

2 chef spoons coconut flour (approx. 9 tbsp.)
1 chef spoon ground almond (approx. 4 tbsp.)
½ chef spoon sugar (approx. 2 tbsp.)
600ml curry base
2 cups masala paste (approx. 500ml)
Optional: 1-2 tbsp. single cream for garnish
Fresh Coriander

Dry fry the coconut flour, ground almond and sugar for 2 minutes. Add heated 600ml of curry base and heat until bubbling, simmer for 5 minutes. Add 2 cups masala paste and heat on medium heat for 5-10 minutes (my sauce is quite thick therefore I don’t reduce it like in some similar recipes). Serve over rice and garnish with single cream and a generous sprinkle of fresh coriander. Although used as a garnish the coriander really does add flavour to the curry and I highly recommend using it!

Curry Base:

8 large onions, chopped
2 large carrots, chopped
1 green pepper, chopped
1 red pepper, chopped
2 sticks celery, chopped
250 – 300ml olive/vegetable oil
2 ½ tbsp. ginger puree (can add ¼ – ½ tsp fresh grated ginger)
4 tbsp. garlic puree
1 tbsp. turmeric
1 tbsp. garam masala
1 tbsp. ground cumin
1 tbsp. ground coriander (I grind the seeds in a magic bullet with 2 pinches cumin seeds)
1 tbsp. ground fenugreek
1 tbsp. Paprika
6 Cardamom pods
1 tbsp. salt
2 cans chopped tomatoes (approx. 800ml)
Water (just enough to cover the vegetables)

In a large saucepan, add the oil. Once hot add a pinch of cumin seeds and a pinch of coriander seeds, fry for 2 minutes.

Fry the onions until cooked. Add the garlic, ginger, turmeric, garam masala, cumin, coriander, fenugreek, paprika, cardamom, salt and allow to fry for a minute or so to release the aromatics.

Add the peppers, carrots and celery. Add in the chopped tomatoes then add enough water to cover the vegetables.

Bring to a boil and then reduce to a simmer for approx. 1 hour, making sure all the vegetables are very soft. Liquidize the mixture with a hand blender or food processor.

Re-add the mixture to the pan and cook for another 10 mins. Allow the gravy to cool and then pour into freezer bags. The curry base will keep for months in the freezer until needed.

Masala Paste:

150ml condensed milk
150ml coconut milk
2 tbsp. tomato paste (x2 concentrated)
1 ½ tbsp. tandoori masala (I used Natco brand)
1 tbsp. Paprika
1 tsp. “spice mix” (I used Ras El Hanout which has a clove-y aroma)
1 ½ tbsp. fresh lemon
1 tsp. ginger puree
1 tsp. garlic puree

Mulberry Italian Ristorante: Lackawanna, New York

My man and I love food; we also love the show Diners, Drive-ins and Dives and that is how we heard about this little slice of heaven. Hidden in the middle of a quiet suburban street is this taste of Italy called Mulberry Italian Ristorante.

It is located in Lackawanna, New York and it was worth crossing the border for (even though we got held up for an hour at the border on account of my man having a British passport!). The walls inside are filled with neat memorabilia; famous people who have visited, old jerseys, posters of vintage icons, Titanic newspaper clippings are just a few things you will find inside.

And the food! Oh, the food. We were brought a basket of bread as soon as we were seated which was lovely. We ordered the meatball and caprese salad to start. This was the juiciest, tastiest, moistest flavour-packing meatball I have ever tasted. Wow!

The caprese salad was perfection. The in-house made mozzarella was everything I had been craving and the portion was generous. It had a great combination of flavours with the creamy mozzarella, light oil, savoury vinegar, crunchy tomatoes and the amuse bouche of pickled red onion. I virtually licked the plate clean.

The lasagna for me was good but not great. The texture was a bit soft (almost mushy) so I would try something else on the menu next time. I’ve heard rave reviews about the lasagna however so we might have just caught it on an off night. The good news is if you do go for the lasagna you only need to order one between two people which considerably lowers your bill at the end of the night. It is mountainous! My man and I who are both big eaters only finished about half of our portions.

The service was the best service I have ever received at a restaurant. Our waitress was so quick and so friendly, and I cannot wait to visit this place again :). It’s been a few months and we are still talking about what an amazing place this is, and how it was some of the best food we have ever tasted. If you’re ever in the area, go! You won’t be disappointed.

SURPRISE! + I Finally Got To See My Man’s House :D

I think the best part about long distance relationships is the opportunity to do this! After our Florida trip last April I booked this flight to surprise my man for his birthday. I’ve been keeping this a secret for 5 MONTHS! It’s been so hard but totally worth it. As I boarded the Air Canada jet and took my seat, I couldn’t sit still. I kept thinking “how is this my life?” Just hopping on a jet from Toronto, Canada to London, England to see an amazing man I get to call mine. My life has become one wonderful adventure ever since Josh has come into it; I’ve never been so happy. The above is the video of me surprising him!

For his birthday I made him this long-distance themed mug and paired it with a tea steeper, lots of David’s teas, and a latte whip. The pink marker turned purple in the oven though :p.

After arriving we visited with some of his family and then headed off to collect sofa’s for his new house. I was so happy to finally get to see it! He’s been keeping me updated with photos but it can’t compare to being there. I got to be in on all the new-house excitement! It was surreal walking about the town with my man as I know it front and back from google street-viewing it so many times, but now I was actually there with the love of my life, as if being plunked into a scene from a movie. I cannot wait to move in there with my man in April. Eeee!

This trip was very relaxed and mostly revolved around going to home stores, visiting with family and friends, fixing up the house and getting all the essentials for it.

During my 2 week visit we (with the help of friends/fam) collected sofa’s, got a coffee table, power-washed, painted, put new windows in the back shed, took up the floor of the shed, re-shingled the shed, installed bathroom fixtures, put together a vanity cabinet and shelf for the bathroom, had internet installed, had the hot water tank replaced, cleaned up the backyard, bought and moved a laundry machine and fridge-freezer (as they call them in Jolly Old England), moved all Josh’s possessions to the new place, and collected countless home-related items (pots, pans, vacuums, decorations, etc).

Even though we didn’t do any of our regular touristy things it was so great to get to be a part of my man’s day-to-day life and we both agree that our recent Canada trip and this trip have been the best we’ve had. Our bond grows stronger all the time :).

Between working hard we did go to the movies and saw Sex Tape (Josh fell asleep as usual!), I went on a night out on the town with Josh and his friends which was lots of fun, we visited a cool farm shop, took a drive to the ocean, ate a LOT of proper English carvery dinners, knighted Ye Olde Griffin Inn as our favourite pub, I tried Eton Mess (yummy), got together with his friends and sampled Polish food, watched tons of movies and our fave tv shows Big Bang Theory and The Inbetweeners, and I got to know his family and especially his friends a lot more which was awesome.

I also got to stay at work with my man and see where he works which was nice; his boss gave him some extra days off because he knew I was here to see him which was really generous. On one evening we got on the topic of Christmas songs and were surprised to find that our country’s have different playlists. He played me some British Christmas songs I had never heard (ie; The Pogues – Fairytale of New York), and I played him some popular Canadian ones he hadn’t heard (Christmas shoes, Feliz Navidad, Christmas Don’t Be Late).

A few days ago we sat at the airport drinking tea, cuddling, and finally, saying our melancholy goodbyes. I told my man that I would start packing again as soon as I got home for our Christmas visit. I miss him so much already, but I’m just so happy and thankful that I have him. I can’t wait to be in his arms again.

Long Distance Vloggers (LDR)

There’s something I reaaaaally wanna post about (I’m dying to shout it to the world!), but I can’t yet. So instead I’m going to post about some of my favourite long distance relationship vloggers. I tried to pick couples who have more than 5 long distance videos and who stood out from the rest. Get ready for the cuteness!

1. Vlogging Blonde – Zar Ann is from Canada and her boyfriend Ares Bond is from Switzerland.  They met while Ares was staying in Canada for 3 months. The two of them fly back and fourth to see each-other and document their adventures together. They post vlogs every other day so there are a TON of them! They also like to play little pranks on one another. They are really cute together and I enjoy their videos.

2. RossTumblr – The above video is the best thing I’ve ever seen. Ever. Ross (a film enthusiast from London, England) proposes to his girlfriend Sophie (a student in NYC, USA) by sending her on a scavenger hunt; it’s so adorable! Most of their long distance videos can be found on RossTumblr although their proposal vid (above) is on Ross’s film-related channel.

3. SurviveTheMiles – RJ is from Ontario, Canada and his girlfriend Liz is from Georgia, USA. They met on Tumblr and travel back and fourth to each-other. I love her southern accent! In their videos they talk about their relationship and also give tips on Surviving the Miles :). In the above video they talk about their experiences telling their parents about their relationship.

4. DontBeASadPanda – Adria and Brandon met on Instagram. He lives in Florida, USA while she lives in New York, USA. You may have to search the channel a little for their LDR videos but there are quite a few mixed in. My favourites are the above video where they talk (and laugh a lot) while giving tips about meeting for the first time. My other favourite is the video of the first time they met at the airport; it’s probably the most emotional airport meeting video I’ve seen which makes it extra sweet.

5. Jake Farni – Alex (Tennessee) and Jake (New Mexico) met online and are defying the distance. My favourite quote from one of their videos: “If we were ever to argue, I feel like it would about how perfect each-other is.” Aww :). Above is the video of them meeting for the first time. Also, while researching I stumbled across Mallow610’s blog (as they have a video where they talk about LDRs), and while they are not an LDR couple they are totally adorable together, so feel free to check them out as well!

6. Cocktails with Ariana – Ariana is an Australian dating a U.S. soldier. She does advice videos, gift guide videos and also talks about her own LDR. She happens to sound super awesome. The above video is a gift guide for care packages.

7. Zuri & Mett Go Dutch Fi – Zuri is from NYC, USA dating Mettin, who is Dutch and Australian. They travel to all sorts of awesome places together and document it in vlogs on Youtube. Places include Rome, Paris, NYC and Barcelona. In June 2014 they closed the distance and continue to document their life together :).

8. Alanna Wilson – My channel! I’m Alanna Wilson from Canada and my lovely (and super handsome) boyfriend Josh is from England. I post videos of our visits (usually set to music) and I also have an original song on there I wrote him called: He Wears Combats, She Wears Cowboy Boots. I plan to do more LDR videos in future.
